Apple Empanadas

Ingredients:

Dough:

  • 2 C Flour
  • 2 T Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/3 C Plant Based Butter
  • 1/4 C Cold Water

Filling:

  • 3 Apples
  • 2 T Plant Based Butter
  • 1/4 C Brown Sugar
  • Cinnamon
  • Chili Powder

Method:

  1. Preheat oven to 350F.
  2. Mix flour, sugar, baking powder, and salt in a bowl.
  3. Combine this with butter, then add water.
  4. Knead until everything is mixed evenly.
  5. Set aside and place damp cloth over bowl.
  6. Peal an cut apples into slices.
  7. Melt butter over medium heat, add brown sugar, cinnamon, and chili powder. Cook until brown sugar has melted completely.
  8. Pinch out a ball of empanada dough.
  9. Using rolling pin to roll ball out into a circle.
  10. Place apple mixture in middle of circular dough.
  11. Fold dough in half and then pinch edges together with fork.
  12. Place on lightly greased baking sheet, brush remaining brown sugar mix over top the empanadas.
  13. Bake for 30 mins.

Note:

Try to keep the dough cold, handling it as minimally as possible. This will make a nice and flaky crust.
