Apple Empanadas
Ingredients:
Dough:
- 2 C Flour
- 2 T Sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1/3 C Plant Based Butter
- 1/4 C Cold Water
Filling:
- 3 Apples
- 2 T Plant Based Butter
- 1/4 C Brown Sugar
- Cinnamon
- Chili Powder
Method:
- Preheat oven to 350F.
- Mix flour, sugar, baking powder, and salt in a bowl.
- Combine this with butter, then add water.
- Knead until everything is mixed evenly.
- Set aside and place damp cloth over bowl.
- Peal an cut apples into slices.
- Melt butter over medium heat, add brown sugar, cinnamon, and chili powder. Cook until brown sugar has melted completely.
- Pinch out a ball of empanada dough.
- Using rolling pin to roll ball out into a circle.
- Place apple mixture in middle of circular dough.
- Fold dough in half and then pinch edges together with fork.
- Place on lightly greased baking sheet, brush remaining brown sugar mix over top the empanadas.
- Bake for 30 mins.
Note:
Try to keep the dough cold, handling it as minimally as possible. This will make a nice and flaky crust.
