Salmorejo
Ingredients:
- 500 g Roma Tomatoes
- 75 ml Olive Oil
- 1 Clove Garlic
- Salt (to taste)
- 100 g Bread (sourdough is a pretty good choice)
Method:
- In a blender puree everything except bread.
- Strain puree so that tomato peels are not in soup.
- Place everything back in blender including bread and puree again.
- Serve cold or at room temperature.
