That Stuff I Found Along the Way

Salmorejo

Ingredients:

  • 500 g Roma Tomatoes
  • 75 ml Olive Oil
  • 1 Clove Garlic
  • Salt (to taste)
  • 100 g Bread (sourdough is a pretty good choice)

Method:

  1. In a blender puree everything except bread.
  2. Strain puree so that tomato peels are not in soup.
  3. Place everything back in blender including bread and puree again.
  4. Serve cold or at room temperature.
