Potato Leek Soup
Ingredients:
- 2 Leeks
- 1 Onion
- 2 Potatoes
- 25 g Margarine
- 2 Vegetable Bullion Cubes
- 200 ml Unsweetened and Unflavored Plant Based Milk
- Salt and Pepper (to taste)
Method:
- Finely chop onions and leeks.
- Peel and dice potatoes.
- In a pan heat margarine over low medium heat and saute onion and leek until the or soft.
- Boil potatoes in water until they soften.
- Remove enough water to have about 750 ml left.
- Add vegetable bullion and turn off heat.
- Add milk and blend with hand mixer until smooth.
- Season with salt and pepper.
