Potato Leek Soup

Ingredients:

  • 2 Leeks
  • 1 Onion
  • 2 Potatoes
  • 25 g Margarine
  • 2 Vegetable Bullion Cubes
  • 200 ml Unsweetened and Unflavored Plant Based Milk
  • Salt and Pepper (to taste)

Method:

  1. Finely chop onions and leeks.
  2. Peel and dice potatoes.
  3. In a pan heat margarine over low medium heat and saute onion and leek until the or soft.
  4. Boil potatoes in water until they soften.
  5. Remove enough water to have about 750 ml left.
  6. Add vegetable bullion and turn off heat.
  7. Add milk and blend with hand mixer until smooth.
  8. Season with salt and pepper.
