Moroccan Lentil Soup

Ingredients:

  • 2 onions (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp Fresh Ginger (grated)
  • 6 C Water
  • 1 C Red Lentils
  • 1 15-Oz Can Chickpeas (drained)
  • 1 19-Oz Can Cannellini Beans
  • 1 14.5-Oz Can Diced Tomatoes
  • 1/2 C Carrots (diced)
  • 1/2 C Celery (chopped)
  • 1 tsp Garam Masala
  • 1 1/2 tsp Ground Cardamom
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Ground Cumin
  • 1 T olive oil

Method:

  1. In large pot saute the onions, garlic, and ginger in olive oil until onions become translucent.
  2. Add the remaining ingredients
  3. Boil for a few minutes then simmer until the lentils are soft.
  4. Puree half the soup in a blender.
  5. Return the pureed soup to the pot, stir and enjoy!
