Lentil Soup
Ingredients:
- 2 C green lentils (rinsed)
- 7 C water
- 14 Oz Mirepoix
- 8 Oz Yukon Gold potatoes (cubed)
- 2 Vegetable Bouillon Cubes
- 1 tsp Oregano
- 1 tsp Basil
- 1/2 tsp Rosemary (crushed)
- 3 Bay Leaves
- 4 Garlic Cloves (chopped)
- 14.5 Oz Can Crushed Tomatoes
- Freshly Ground Pepper (to taste)
- salt (to taste)
- 2 tsp Red Wine Vinegar
Method:
- Place lentils, water, and next 7 ingredients into large pot.
- Bring to a boil.
- Stir well, cover pot, and cook over low heat until lentils are tender, about an hour.
- Add tomatoes, pepper, and salts.
- Cook uncovered for at least 15 minutes, adding more water if it seems to thick, and stirring often.
- Stir in vinegar just before serving.
