Lentil Soup

Ingredients:

  • 2 C green lentils (rinsed)
  • 7 C water
  • 14 Oz Mirepoix
  • 8 Oz Yukon Gold potatoes (cubed)
  • 2 Vegetable Bouillon Cubes
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1/2 tsp Rosemary (crushed)
  • 3 Bay Leaves
  • 4 Garlic Cloves (chopped)
  • 14.5 Oz Can Crushed Tomatoes
  • Freshly Ground Pepper (to taste)
  • salt (to taste)
  • 2 tsp Red Wine Vinegar

Method:

  1. Place lentils, water, and next 7 ingredients into large pot.
  2. Bring to a boil.
  3. Stir well, cover pot, and cook over low heat until lentils are tender, about an hour.
  4. Add tomatoes, pepper, and salts.
  5. Cook uncovered for at least 15 minutes, adding more water if it seems to thick, and stirring often.
  6. Stir in vinegar just before serving.
