Lentil Rice Soup
Ingredients:
- 2 T Olive Oil
- 2 T Margarine
- 1 Onion (chopped)
- 1 C Lentils (prepared)
- 1 1/2 tsp Salt
- 1/2 C Brown Rice
- 1 6-Oz Can Tomato Paste
- 1 16-Oz Can Stewed Tomatoes
- 3 C Water
- 1 Bay Leaf
Method:
- Saute onions in oil and margarine until golden.
- Add remaining ingredients and simmer until tender.
- Add more water for desired consistency.
