That Stuff I Found Along the Way

Asian Soup

Ingredients:

  • 2 C Bok Choy (chopped)
  • 2 C Napa Cabbage (chopped)
  • 5 Cloves Garlic (minced)
  • 1/4 C Fresh Ginger (julienned)
  • 6 Oz Shitake Mushrooms (sliced)
  • 2 C Scallions (chopped)
  • 1 C Canned Water Chestnuts (sliced)
  • 1 5 Oz Can Bamboo Shoots (sliced)
  • 1/2 C Red Pepper (thinly sliced)
  • 1/4 tsp Red Pepper Flakes
  • 8 C Vegetable Broth
  • 1 C Fresh Bean Sprouts
  • 2 C Snow Peas (stringed)
  • 2 T Soy Sauce
  • 1/2 C Cilantro (finely chopped)

Method:

  1. Put boc choy, napa cabbage, garlic, ginger root, shitake mushrooms, scallions, water chestnuts, bamboo shoots, red bell pepper, pepper flakes and vegetable stock into a large soup pot.
  2. Stir to combine.
  3. Cover and bring to a boil over high heat.
  4. Reduce heat to low and simmer, partally covered for approximtely 10 minutes.
  5. Add bean sprouts, soy sauce and snow peas.
  6. Cook for an additional 4 minutes.
  7. Stir in cilantro and serve hot.
