Asian Soup
Ingredients:
- 2 C Bok Choy (chopped)
- 2 C Napa Cabbage (chopped)
- 5 Cloves Garlic (minced)
- 1/4 C Fresh Ginger (julienned)
- 6 Oz Shitake Mushrooms (sliced)
- 2 C Scallions (chopped)
- 1 C Canned Water Chestnuts (sliced)
- 1 5 Oz Can Bamboo Shoots (sliced)
- 1/2 C Red Pepper (thinly sliced)
- 1/4 tsp Red Pepper Flakes
- 8 C Vegetable Broth
- 1 C Fresh Bean Sprouts
- 2 C Snow Peas (stringed)
- 2 T Soy Sauce
- 1/2 C Cilantro (finely chopped)
Method:
- Put boc choy, napa cabbage, garlic, ginger root, shitake mushrooms, scallions, water chestnuts, bamboo shoots,
red bell pepper, pepper flakes and vegetable stock into a large soup pot.
- Stir to combine.
- Cover and bring to a boil over high heat.
- Reduce heat to low and simmer, partally covered for approximtely 10 minutes.
- Add bean sprouts, soy sauce and snow peas.
- Cook for an additional 4 minutes.
- Stir in cilantro and serve hot.
