Niter Kibbeh
Ingredients:
- 1 lb Unsalted Butter
- 1 Onion (coarsely chopped)
- 3 T Garlic (finely chopped)
- 1 tsp Cardamom
- 1 tsp Fenugreek Seeds
- 1 tsp Ground Cumin
- 1-2 T Ginger Root (peeled and finely chopped)
- 1/4 tsp Ground Nutmeg
- 1 tsp Oregano
- 1/2 tsp Ground Turmeric
- 5-6 Basil Leaves
Method:
- Place butter in a medium sauce pan and melt completely on low heat.
- Simmer without letting butter brown, until the surface is completely coated with foam.
- Skim off the foam as it rises to the surface, skimming until no more remains.
- One the butter looks transparent, add all the ingredients.
- Continue cooking on low heat for about 15-20 minutes.
- Pass the kibbeh through a cheese cloth or sieve.
- Store in a tightly covered container in the fridge.
