Niter Kibbeh

Ingredients:

  • 1 lb Unsalted Butter
  • 1 Onion (coarsely chopped)
  • 3 T Garlic (finely chopped)
  • 1 tsp Cardamom
  • 1 tsp Fenugreek Seeds
  • 1 tsp Ground Cumin
  • 1-2 T Ginger Root (peeled and finely chopped)
  • 1/4 tsp Ground Nutmeg
  • 1 tsp Oregano
  • 1/2 tsp Ground Turmeric
  • 5-6 Basil Leaves

Method:

  1. Place butter in a medium sauce pan and melt completely on low heat.
  2. Simmer without letting butter brown, until the surface is completely coated with foam.
  3. Skim off the foam as it rises to the surface, skimming until no more remains.
  4. One the butter looks transparent, add all the ingredients.
  5. Continue cooking on low heat for about 15-20 minutes.
  6. Pass the kibbeh through a cheese cloth or sieve.
  7. Store in a tightly covered container in the fridge.
