Spicy Black Bean Burgers
Ingredients
- 2 C Dry Black Beans (or 2 16 Oz Cans)
- 2 Jalepenos (diced)
- 1 Red Pepper (diced)
- 1/2 Green Pepper (diced)
- 1/2 Onion (diced)
- 4 Cloves Garlic (diced)
- 1 C Breadcrumbs
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp oregano
- Oil for frying
- Salt and pepper
Method:
- Saute veggies in a few tablespoons of oil until they are a bit soft, but not browned.
- Cook the beans according to the directions on the package. If you are using dry
beans you’ll need to soak them overnight.
- Add your breadcrumbs to beans and mash up the beans and breadcrumbs. You want them to
still have plenty of texture, but just broken up a bit.
- Mix in your sauteed veggies and all your other spices.
- Form about 4 Oz patties.
- Cook in a few tablespoons of oil over medium high heat for about 4 minutes per side
or until browned.
