Shiro Wat

Ingredients

  • 1/2 C Olive Oil
  • 1/2 C Chickpea Flour
  • 1 Onion (pureed)
  • 1 C Tomato (pureed)
  • 4 Cloves Garlic (chopped)
  • 2 T Niter Kibbeh
  • 2 C Water
  • 1 T Berbere Spice
  • 1 tsp Garlic Powder
  • 1/4 tsp Sugar
  • Salt (to taste)

Method:

  1. Bring a sauce pan to medium heat.
  2. Add pureed onions to pan and saute until they start to brown.
  3. Add the oil and berbere spice and saute for 1-2 minutes.
  4. Add tomato and chopped garlic and saute for and additional 2-3 minutes.
  5. Slowly whisk in the chickpea flour and water until smooth.
  6. Heat until the shiro begins to bubble.
  7. Add the niter kibbeh, garlic powder, sugar, and salt.
  8. Stir until combined.
  9. Simmer for about 5-10 minutes over low heat.
