That Stuff I Found Along the Way

Shakshuka

Ingredients:

  • 1 T Olive Oil
  • 1/2 C White Onion (diced)
  • 3 cloves garlic (minced)
  • 1 28 Oz Can Diced Tomatoes
  • 3 T Tomato Paste
  • 1 T Maple Syrup
  • 2 tsp Salt
  • 2 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 2 tsp Cayenne Pepper
  • 1/4 tsp Ground Cinnamon
  • 1 pinch Cardamom
  • 1 pinch Coriander
  • 225 g Dry Chickpeas (soaked and ready to cook)
  • 10 Kalamata Olives (pitted)
  • Fresh Cilantro (chopped)

Method:

  1. Heat olive oil in large sauce pan over medium heat.
  2. Add onion and garlic. Saute for 4-5 minutes, or until translucent.
  3. Add diced tomatoes, tomato paste, honey, salt, paprika, cumin, cayenne, cinnamon, cardamom, and coriander.
  4. Simmer over medium heat and cook for 2-3 minutes, stirring frequently.
  5. Add chickpeas and olives.
  6. Simmer on medium-low for 15-20 minutes.
  7. Serve with bread, rice, or farro.
