Shakshuka
Ingredients:
- 1 T Olive Oil
- 1/2 C White Onion (diced)
- 3 cloves garlic (minced)
- 1 28 Oz Can Diced Tomatoes
- 3 T Tomato Paste
- 1 T Maple Syrup
- 2 tsp Salt
- 2 tsp Smoked Paprika
- 1 tsp Ground Cumin
- 2 tsp Cayenne Pepper
- 1/4 tsp Ground Cinnamon
- 1 pinch Cardamom
- 1 pinch Coriander
- 225 g Dry Chickpeas (soaked and ready to cook)
- 10 Kalamata Olives (pitted)
- Fresh Cilantro (chopped)
Method:
- Heat olive oil in large sauce pan over medium heat.
- Add onion and garlic. Saute for 4-5 minutes, or until translucent.
- Add diced tomatoes, tomato paste, honey, salt, paprika, cumin, cayenne,
cinnamon, cardamom, and coriander.
- Simmer over medium heat and cook for 2-3 minutes, stirring frequently.
- Add chickpeas and olives.
- Simmer on medium-low for 15-20 minutes.
- Serve with bread, rice, or farro.
