That Stuff I Found Along the Way

Rawvioli

Ingredients:

Wrappers:

  • 4 Turnips

Cheese Filling:

  • 1 C Pine Nuts
  • 1 C Macadamia Nuts
  • 1 C Walnuts
  • 6 tsp Bragg's
  • 8 tsp Lemon Juice
  • 2 Cloves Garlic
  • 1 C parsley

Tomato Sauce:

  • 2 Tomatoes
  • 1/2 C Sun-Dried Tomatoes
  • 1/4 C Basil
  • 1 Clove Garlic
  • 6 Dates
  • Dash Olive Oil (optional)

Method:

Wrappers:

  1. Peel the turnips.
  2. Slice the turnips into very thin disk slices.

Cheese Filling:

  1. Grind the pine nuts, macadamia nuts, and walnuts in a food processor.
  2. Add the rest of the ingredients and blend until creamy.

Tomato Sauce:

  1. Soak the sun-dried tomatoes until soft.
  2. Blend tomatoes, sun-dried tomatoes, basil, and garlic in food processor until smooth.
  3. Add the dates and olive oil and blend until smooth.

Assembly:

  1. Remove a single turnip slice.
  2. Place a teaspoon of cheese filling in the turnip slice and fold the turnip over until all the sides meet.
  3. Squeeze the edges together. The filling will help stick the wrapper to itself.
  4. Place rawvioli in a single layer on a large plate and drizzle sauce over them.
  5. Allow to sit for a few hours.
