Ramen
Ingredients:
- 1 T Oil
- 7 Oz Shiitake Mushrooms (stems removed, thinly sliced)
- 4 Garlic Cloves (minced)
- 1 inch piece ginger (peeled, minced)
- 1 Chile Pepper (minced)
- 5 Oz package Ramen Noodles
- 1 C Vegetable Broth
- 4 C Baby Spinach
- 1 T Plant Based Butter
- 2 Scallions (chopped)
Method:
- Heat oil in a large skillet over high heat.
- Add the mushrooms and cook 1 to 2 minutes, stirring occasionally until the mushrooms
start to soften.
- Add the garlic, ginger, and chile and reduce heat to medium.
- Cook another 1 to 2 minutes until the mushrooms are cooked and the garlic has begun to
brown.
- Add the broth and return heat to high until liquid begins to boil.
- Add noodles, cover, and reduce heat to simmer.
- Simmer 4 to 5 minutes until the noodles are tender.
- Add the spinach, and butter and cook 1 to 2 minutes or until the spinach is wilted.
- Garnish with scallions and serve immediately.
