That Stuff I Found Along the Way

Ramen

Ingredients:

  • 1 T Oil
  • 7 Oz Shiitake Mushrooms (stems removed, thinly sliced)
  • 4 Garlic Cloves (minced)
  • 1 inch piece ginger (peeled, minced)
  • 1 Chile Pepper (minced)
  • 5 Oz package Ramen Noodles
  • 1 C Vegetable Broth
  • 4 C Baby Spinach
  • 1 T Plant Based Butter
  • 2 Scallions (chopped)

Method:

  1. Heat oil in a large skillet over high heat.
  2. Add the mushrooms and cook 1 to 2 minutes, stirring occasionally until the mushrooms start to soften.
  3. Add the garlic, ginger, and chile and reduce heat to medium.
  4. Cook another 1 to 2 minutes until the mushrooms are cooked and the garlic has begun to brown.
  5. Add the broth and return heat to high until liquid begins to boil.
  6. Add noodles, cover, and reduce heat to simmer.
  7. Simmer 4 to 5 minutes until the noodles are tender.
  8. Add the spinach, and butter and cook 1 to 2 minutes or until the spinach is wilted.
  9. Garnish with scallions and serve immediately.
