That Stuff I Found Along the Way

Pizza

Ingredients:

Sauce:

  • 2 Cans of Diced Tomatoes in Sauce
  • 2 Cloves of Garlic (minced)
  • 1 T Olive Oil
  • 2 tsp Oregano
  • 1 tsp Rosemary
  • 1/2 tsp Thyme
  • 1 Bay Leaf
  • 1 tsp Basil
  • Salt to taste

Dough:

  • 100% Flour
  • 10% Yeast
  • 2% Salt
  • 2% Honey
  • 2% Olive Oil
  • 60% Water
  • 10% Gluten
  • Corn Meal for pan dusting

Method:

Sauce:

  1. In a large sauce pan heal oil.
  2. Saute garlic until it begins to brown (don't over cook as it will become bitter).
  3. Add canned tomatoes and simmer for about 20 minutes, or until it reduces to a sauce like consistency.
  4. Add all spices and cook for another 5 minutes.

Dough:

  1. Mix all ingredients together and let sit for 15 minutes.
  2. Knead until dough is smooth and elastic.
  3. Place in oiled bowl and cover with moist towel.
  4. Let rise until dough has doubled in size.

Combine:

  1. Preheat oven to highest setting.
  2. Cut dough into two parts.
  3. Press dough outwards from center to make a circle, leaving the center a bit thicker than the edges.
  4. Spread a small amount of sauce over the dough from the center outward.
  5. Put your favorite toppings on the pizza.
  6. Place pizza in hot oven cook until crust becomes golden brown and the toppings are cooked to desired doneness.
