Lentil Mushroom Burgers
Ingredients
- 2 T Extra-virgin Olive Oil
- 3/4 C Onion (chopped)
- 2 Cloves Garlic (chopped)
- 105 g Bread Crumbs
- 170 g Cremini Mushrooms (sliced)
- 225 g Cooked Lentils (115 g uncooked)
- 1 T Mustard
- 1 tsp Thyme
- 1/2 tsp Black Pepper
- 1/4 tsp Salt
- 1 Egg
Method:
- Preheat broiler.
- Heat a large nonstick skillet over medium-high heat.
- Add 1 T oil to pan; swirl to coat.
- Saute onion and garlic for about 3 minutes or until onion is
tender. Remove from heat.
- Combine mushrooms, lentils, mustard, thyme, black pepper and salt
in food processor and pulse to combine.
- Combine onion mixture, breadcrumbs, mushroom mixture, and egg in a large
bowl, stirring well.
- Divide mixture into 4 equal portions, gently shaping each into a 1/2 inch
thick patty.
- Heat a large nonstick skillet over medium-high heat.
- Add the remaining 1 T oil to pan and swirl to coat.
- Add patties and cook for 4 minutes on each side or until browned.
- Remove patties from pan; arrange in a single layer on a baking sheet.
