Lentil Mushroom Burgers

Ingredients

  • 2 T Extra-virgin Olive Oil
  • 3/4 C Onion (chopped)
  • 2 Cloves Garlic (chopped)
  • 105 g Bread Crumbs
  • 170 g Cremini Mushrooms (sliced)
  • 225 g Cooked Lentils (115 g uncooked)
  • 1 T Mustard
  • 1 tsp Thyme
  • 1/2 tsp Black Pepper
  • 1/4 tsp Salt
  • 1 Egg

Method:

  1. Preheat broiler.
  2. Heat a large nonstick skillet over medium-high heat.
  3. Add 1 T oil to pan; swirl to coat.
  4. Saute onion and garlic for about 3 minutes or until onion is tender. Remove from heat.
  5. Combine mushrooms, lentils, mustard, thyme, black pepper and salt in food processor and pulse to combine.
  6. Combine onion mixture, breadcrumbs, mushroom mixture, and egg in a large bowl, stirring well.
  7. Divide mixture into 4 equal portions, gently shaping each into a 1/2 inch thick patty.
  8. Heat a large nonstick skillet over medium-high heat.
  9. Add the remaining 1 T oil to pan and swirl to coat.
  10. Add patties and cook for 4 minutes on each side or until browned.
  11. Remove patties from pan; arrange in a single layer on a baking sheet.
