That Stuff I Found Along the Way

Jambalaya

Ingredients:

  • 2 C Rice
  • 2 Veggie Chorizo Sausage (sliced)
  • Veggie Shrimp
  • 2 Tomatoes (diced)
  • 1/2 White Onion (diced)
  • 1 Green Bell Pepper
  • 4 C Vegetable Broth
  • 2 T Olive Oil
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Black Pepper
  • 1/4 tsp White Pepper
  • 1/4 tsp Oregano
  • Pinch of Cayene or to taste
  • Pinch of Thyme

Method:

  1. Saute chorizo, onion, and olive oil in cast iron pan until the chorizo is browned and the onion is translucent.
  2. Add tomato, bell pepper, veggie shrimp, rice and spices to pan and mix.
  3. Add vegetable broth and bring to a boil.
  4. Reduce heat to a simmer and cook, stirring occasionally, until rice is cooked and liquid has mostly evaporated.
  5. Remove from heat and let sit for 5 minutes while the rest of the liquid is soaked up.
