Jambalaya
Ingredients:
- 2 C Rice
- 2 Veggie Chorizo Sausage (sliced)
- Veggie Shrimp
- 2 Tomatoes (diced)
- 1/2 White Onion (diced)
- 1 Green Bell Pepper
- 4 C Vegetable Broth
- 2 T Olive Oil
- 1/2 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- 1/4 tsp Onion Powder
- 1/4 tsp Black Pepper
- 1/4 tsp White Pepper
- 1/4 tsp Oregano
- Pinch of Cayene or to taste
- Pinch of Thyme
Method:
- Saute chorizo, onion, and olive oil in cast iron pan until the chorizo is browned and the onion is translucent.
- Add tomato, bell pepper, veggie shrimp, rice and spices to pan and mix.
- Add vegetable broth and bring to a boil.
- Reduce heat to a simmer and cook, stirring occasionally, until rice is cooked and liquid has mostly evaporated.
- Remove from heat and let sit for 5 minutes while the rest of the liquid is soaked up.
