Faux Salmon Casserole
Ingredients:
- 2 C Almonds (soaked 8-10 hours)
- 2 Carrots
- 1/2 C Red Onion (coarsely chopped)
- 1 1/2 C finely Celery (minced)
- 1/2 C Parsley (minced)
- 1/4 C Shallot or Scallion (minced)
- 1/4 C Lemon Juice
- 2 tsp Kelp Powder
- 1 tsp Dulse Powder
- 1 tsp Sea Salt
- 2 Carrots (julienned)
- 1 Zucchini (julienned)
- 1 Red Pepper (julienned)
Method:
- Drain soaked almonds, rinse and drain again.
- Send almonds, carrots and onions through a heavy duty juicer using the blank screen.
- Pour mixture in a large bowl.
- Mix in celery, parsley, shallots, lemon juice, kelp, dulse, and sea salt.
- Shape into a mold or place in a pie crust.
- Add julienned of carrot, zucchini and red pepper
