Faux Salmon Casserole

Ingredients:

  • 2 C Almonds (soaked 8-10 hours)
  • 2 Carrots
  • 1/2 C Red Onion (coarsely chopped)
  • 1 1/2 C finely Celery (minced)
  • 1/2 C Parsley (minced)
  • 1/4 C Shallot or Scallion (minced)
  • 1/4 C Lemon Juice
  • 2 tsp Kelp Powder
  • 1 tsp Dulse Powder
  • 1 tsp Sea Salt
  • 2 Carrots (julienned)
  • 1 Zucchini (julienned)
  • 1 Red Pepper (julienned)

Method:

  1. Drain soaked almonds, rinse and drain again.
  2. Send almonds, carrots and onions through a heavy duty juicer using the blank screen.
  3. Pour mixture in a large bowl.
  4. Mix in celery, parsley, shallots, lemon juice, kelp, dulse, and sea salt.
  5. Shape into a mold or place in a pie crust.
  6. Add julienned of carrot, zucchini and red pepper
