Drunken Noodle

Ingredients:

  • 1 pkg Baked Tofu
  • 1 pkg Fresh Pho Noodle
  • 2 Eggs (leave out to make vegan)
  • 10-15 Leaves of Fresh Thai Basil
  • 4 Cloves Garlic (chopped)
  • 1/4 White Onion (sliced)
  • 5-6 Thai Chilies
  • 1 T Chili Sauce (or Sriracha)
  • 1 T Dark Soy Sauce
  • 2 T Light Soy Sauce
  • 1 T Sugar
  • 1 C Vegie Stock
  • 2 T Oil

Method:

  1. Saute Onion, Garlic, and Chilies.
  2. Add Tofu and saute for about 5 minutes.
  3. Add stock, chili sauce, soy sauce, and sugar.
  4. Let boil and then add noodles.
  5. Cook until sauce is reduced.
  6. Make space for eggs and fry the eggs.
  7. Mix everything together.
