Vegan Cookies and Cream Ice Cream

Ingredients

  • 3 C Vanilla Oat Milk
  • 5 T Cornstarch
  • 1/3 C Sugar
  • 1/2 Vanilla Bean (split)
  • 1/2 tsp Almond Extract
  • 6-10 Vegan Chocolate Cookies

Method

  1. Bring to a simmer 2 1/2 C milk, sugar and vanilla bean.
  2. Scrape out the vanilla bean, stirring the seeds into the milk mixture, and discard the pod.
  3. Whisk cornstarch together with remaining 1/2 C milk and pour into the hot vanilla milk mixture, while whisking constantly.
  4. Reduce heat to medium low, stirring occasionally, cook until mixture begins to thinken and starts to bubble (3-5 minutes).
  5. Stir in almond extract.
  6. Refrigerate until cold.
  7. Crush and add cookies with chilled cream base into your ice cream maker and freeze according to directions.
