Pumpkin Pie Bars

Ingredients:

  • 1 C Coconut Flour
  • 1/2 C Protein Powder
  • 2 T Granulated Sweetener of Choice
  • 1 T Cinnamon
  • 1/2 tsp Ground Cloves
  • 1 tsp Ground Ginger
  • 1/4 C Almond Butter
  • 1/2 C Sugar Free Maple Syrup
  • 1/2 C Pumpkin Puree (not pumpkin pie filling!)
  • 2-3 T Unsweetened Almond Milk (or cashew, or whatever)

Method:

  1. Line a large baking dish with parchment paper and set aside.
  2. In large mixing bowl, combine the flour, protein powder, granulated sweetener, and spices and mix well.
  3. In a microwave-safe bowl, combine the nut butter and sugar free maple syrup, and heat until melted.
  4. Pour the wet mixture into the dry and mix well.
  5. Add the pumpkin puree and mix until combined.
  6. Using a spoon, add the milk one spoonful at a time until a thick, firm dough is formed.
  7. Transfer to lined baking dish and press firmly.
  8. Refrigerate for at least 30 minutes.
  9. Cut mine into 12 bars.
