Pumpkin Pie Bars
Ingredients:
- 1 C Coconut Flour
- 1/2 C Protein Powder
- 2 T Granulated Sweetener of Choice
- 1 T Cinnamon
- 1/2 tsp Ground Cloves
- 1 tsp Ground Ginger
- 1/4 C Almond Butter
- 1/2 C Sugar Free Maple Syrup
- 1/2 C Pumpkin Puree (not pumpkin pie filling!)
- 2-3 T Unsweetened Almond Milk (or cashew, or whatever)
Method:
- Line a large baking dish with parchment paper and set aside.
- In large mixing bowl, combine the flour, protein powder, granulated sweetener, and
spices and mix well.
- In a microwave-safe bowl, combine the nut butter and sugar free maple syrup, and
heat until melted.
- Pour the wet mixture into the dry and mix well.
- Add the pumpkin puree and mix until combined.
- Using a spoon, add the milk one spoonful at a time until a thick, firm dough is formed.
- Transfer to lined baking dish and press firmly.
- Refrigerate for at least 30 minutes.
- Cut mine into 12 bars.
