Chocolate Cake

Ingredients:

Batter:

  • 100 g Unsalted Butter
  • 250 g Sugar
  • 50 ml Oil
  • 200 g Baking Chocolate
  • 2 tsp Vanilla Extract
  • 4 Eggs
  • 80 ml Milk
  • 100 ml Cream
  • 300 g Flour
  • 3 tsp Baking Powder

Frosting -

  • 200 g Baking Chocolate
  • 300 g Powdered Sugar
  • 50 g Butter
  • 50 ml Cream

Method:

Cake:

  1. Preheat oven to 180C (350F).
  2. Line the base of a deep 20 cm (9 inch) cake tin with parchment paper.
  3. Melt the butter over a low heat in a small pan.
  4. Add chocolate and let melt.
  5. Pour chocolate into a bowl with the sugar, oil, and vanilla.
  6. Beat until smooth.
  7. Whisk in the eggs followed by the milk and cream.
  8. Sift flour and baking powder into the butter mixture and beat until smooth.
  9. Pour into the prepared tin and cover the top of the tin with aluminum foil.
  10. Bake for 30 minutes.
  11. Remove the foil and bake for a another 20 minutes, or the top is springy and a tooth pick comes out clean when inserted into the middle.
  12. Remove the cake from the oven and set aside to cool completely.

Frosting:

  1. Melt butter in a pan then add chocolate over low heat.
  2. Mix the chocolate/butter mixture and cream into the sugar.
  3. Spread the frosting onto the top of the cake.
