Chocolate Cake
Ingredients:
Batter:
- 100 g Unsalted Butter
- 250 g Sugar
- 50 ml Oil
- 200 g Baking Chocolate
- 2 tsp Vanilla Extract
- 4 Eggs
- 80 ml Milk
- 100 ml Cream
- 300 g Flour
- 3 tsp Baking Powder
Frosting -
- 200 g Baking Chocolate
- 300 g Powdered Sugar
- 50 g Butter
- 50 ml Cream
Method:
Cake:
- Preheat oven to 180C (350F).
- Line the base of a deep 20 cm (9 inch) cake tin with parchment paper.
- Melt the butter over a low heat in a small pan.
- Add chocolate and let melt.
- Pour chocolate into a bowl with the sugar, oil, and vanilla.
- Beat until smooth.
- Whisk in the eggs followed by the milk and cream.
- Sift flour and baking powder into the butter mixture and beat until smooth.
- Pour into the prepared tin and cover the top of the tin with aluminum foil.
- Bake for 30 minutes.
- Remove the foil and bake for a another 20 minutes, or the top is springy
and a tooth pick comes out clean when inserted into the middle.
- Remove the cake from the oven and set aside to cool completely.
Frosting:
- Melt butter in a pan then add chocolate over low heat.
- Mix the chocolate/butter mixture and cream into the sugar.
- Spread the frosting onto the top of the cake.
