Vegan Banana Bread

Ingredients:

  • 1/4 C Vegetable Shortening
  • 1 C Sugar
  • 1/2 C Water
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • 2 C Flour
  • 1 tsp Salt
  • 2 tsp Cinnamon
  • 1 tsp Nutmeg
  • 3 Bananas (Mashed)
  • 1/2 C Chopped Walnuts

Method:

  1. Preheat oven to 350F.
  2. Combine shortening and sugar, then add 1/4 C water and vanilla.
  3. Add baking soda and rest of water.
  4. In a separate bowl combine flour, salt, cinnamon, and nutmeg.
  5. Combine all ingredients and mix thoroughly.
  6. Add bananas and walnuts.
  7. Bake in well oiled 9x5x3 loaf pan for 50 minutes.

Notes:

This can be baked in a smaller loaf pan, but will have to be cooked longer. To test for doneness poke a toothpick into center and remove. If toothpick comes out clean banana bread is done.
