Vegan Banana Bread
Ingredients:
- 1/4 C Vegetable Shortening
- 1 C Sugar
- 1/2 C Water
- 1 tsp Vanilla
- 1 tsp Baking Soda
- 2 C Flour
- 1 tsp Salt
- 2 tsp Cinnamon
- 1 tsp Nutmeg
- 3 Bananas (Mashed)
- 1/2 C Chopped Walnuts
Method:
- Preheat oven to 350F.
- Combine shortening and sugar, then add 1/4 C water and vanilla.
- Add baking soda and rest of water.
- In a separate bowl combine flour, salt, cinnamon, and nutmeg.
- Combine all ingredients and mix thoroughly.
- Add bananas and walnuts.
- Bake in well oiled 9x5x3 loaf pan for 50 minutes.
Notes:
This can be baked in a smaller loaf pan, but will have to be cooked longer. To test for doneness poke a toothpick into center and remove. If toothpick comes out clean banana bread is done.
