Tofu Scramble
Ingredients:
- 400 g Extra Firm Tofu (pressed and cubed)
- 120 g Onion (diced)
- 112 g Crimini Mushrom (chopped)
- 175 g Tomato (diced)
- 70 g Raw Spinach (sliced)
- 1/4 C Yellow Mustard
- 2 T Nutritional Yeast
- Olive for sauteing
Method:
- Saute your tofu in olive oil over medium heat.
- Once browned set aside and saute onions.
- When onions are translucent add in mushrooms.
- Now add tofu back in and add mustard and nutritional yeast.
- Mix thoroughly and finally turn off heat.
- Mix in tomato then spinach.
