Cornbread

Ingredients:

  • 160 g cornmeal
  • 140 g flour
  • 1 T baking powder
  • 1 tsp salt
  • 150 g sugar
  • 1 C Milk
  • 1/4 C Oil
  • 1 flax egg

Method:

  1. Preheat oven to 200C.
  2. In a small cast iron skillet heat oil.
  3. Mix all dry ingredients.
  4. Add all wet ingredients except oil.
  5. Swirl your pan to coat with oil and then add the oil to the cornbread mixture.
  6. Pour batter into cast iron skillet.
  7. Bake in cast iron skillet for 20-25 minutes.
