Dogfish Head 90 Minute IPA Clone

Ingredients:

Specialty Grains

  • 0.75 lbs. Dingemans Caramel Pils
  • 0.25 lbs. Briess Caramel 120

Fermentables:

  • 3 lbs. Pilsen Malt Syrup (boil for 60 min.)
  • 9 lbs. Pilsen Malt Syrup (boil for 15 min.)

Hops:

Continuously Hopped

  • 2 oz Amarillo
  • 0.5 oz Simcoe
  • 0.5 oz Warrior

Dry Hopped:

  • 1 oz Amarillo
  • 0.5 oz Simcoe
  • 0.5 oz Warrior

Yeast:

  • Wyeast #1056 American Ale Yeast.

Method:

  1. Steep specialty grains at 150F for 30 minutes in 6 Gals of water.
  2. Remove steeped grains.
  3. Add fermentables and raise temperature to boiling.
  4. Once the syrups have dissolved begin adding the continuous hop additions. I tend to add them even every 5 to 10 minutes over the 90 minute boil time.
  5. Transfer wort to fermentation chamber and let cool.
  6. Add yeast and rest of hops.
  7. Let ferment for a week.
  8. Bottle.
