Vietnamese Spring Rolls

Ingredients:

Peanut Sauce:

  • 1 C of peanut butter
  • 1 C of hot water
  • 1/4 C of soy sauce
  • 1/4 C of molasses (regular, not blackstrap)
  • 1/2 C of white vinegar
  • 1 tsp of cayenne pepper
  • 1/2 tsp of ground ginger
  • 2-4 T of sugar (depending on what you like, just taste as you go)

Rolls:

  • 8 rice paper rounds
  • 100g vermicelli rice noodles
  • 1 C shredded lettuce
  • 1 Cucumber, cut into thin strips
  • 1/2 C bean sprouts
  • 1/2 C grated carrot
  • fresh Vietnamese mint, chopped
  • fresh coriander, chopped
  • garlic chive (optional)

Method:

  1. Mix all peanut sauce together in a small bowl.
  2. Soak rice paper in lukewarm water until they become soft.
  3. Fill rice paper with ingredients like you are making a burrito.
