Vietnamese Spring Rolls
Ingredients:
Peanut Sauce:
- 1 C of peanut butter
- 1 C of hot water
- 1/4 C of soy sauce
- 1/4 C of molasses (regular, not blackstrap)
- 1/2 C of white vinegar
- 1 tsp of cayenne pepper
- 1/2 tsp of ground ginger
- 2-4 T of sugar (depending on what you like, just taste as you go)
Rolls:
- 8 rice paper rounds
- 100g vermicelli rice noodles
- 1 C shredded lettuce
- 1 Cucumber, cut into thin strips
- 1/2 C bean sprouts
- 1/2 C grated carrot
- fresh Vietnamese mint, chopped
- fresh coriander, chopped
- garlic chive (optional)
Method:
- Mix all peanut sauce together in a small bowl.
- Soak rice paper in lukewarm water until they become soft.
- Fill rice paper with ingredients like you are making a burrito.
